Ian Dowding has worked in the restaurant business for over fifty years. After training and several jobs in small restaurants, he moved to East Sussex to take a job as head chef at a newly opened restaurant called The Hungry Monk. He remained there for twenty years, and during that time, a dessert was created which was christened Banoffi Pie by the proprietor Nigel Mackenzie. It has since become known around the world.


He went on to open his own restaurant, Quincys, in 1988 in Seaford, and in 2000, he and his wife moved on, selling the restaurant. He continued his cooking career as a freelance chef and consultant. He also taught cookery evening classes at Sussex Downs College and worked on several TV programmes.



In 2020, he published a cookery book called Fish Bananas and a year or so later, a novel called Fish Farce (he has a thing about fish). He also discovered that people found the story of Banoffi Pie interesting enough to ask him to do talks on the subject.


Only last year, he also discovered that he is the nephew of the Great Train Robber Ronnie Biggs—his mother’s brother—a secret she took to the grave with her. He is currently writing a book called A Fraternity of Thieves, about the smuggling that went on along the coast of Sussex in the 18th century. While living and working in Jevington at The Hungry Monk, he heard a lot of stories about local characters and the places where the action took place.
